Gluten-Free Banana Pancakes

I’m back baby! Did you miss me? Not only am I back, but I’m diving into a New Year’s resolution like the rest of you! Michael and I vowed to drop some pounds, and add more physical activity to our daily lives. I know… so predictable right? Well too bad. That’s how it is, and you all get to enjoy the benefits of healthy recipes like these gluten-free banana pancakes! Yum! I kid you not, it’s like having dessert for breakfast.


Oh, how I missed Bread & With It over winter break. Don’t get me wrong… I thoroughly enjoyed relaxing, but there is just something about typing my thoughts next to delicious food pictures (like these gluten-free banana pancakes, seriously… don’t they look amazing?) that puts me in a good mood!

My break was relaxing and enjoyable, with the exception of sick kids. Oh yes. One after the next they were dropping like flies. This bug even got Michael. He walked up the stairs to our bedroom, and wasn’t seen again for two days. Toward the end of all this, Winnie and Locke both developed blisters in their mouths, and on their feet & hands. With a quick visit to the doctor’s office, we were diagnosed with Hand Foot & Mouth Disease. My response was… “You’ve GOT to be kidding me!”

Apparently it’s very common and highly contagious! With mouth blisters, it’s impossible to eat anything, so gluten-free banana pancakes were not an option. I am really hoping this one doesn’t come around again. I could easily live out the rest of my days never seeing Hand Foot & Mouth Disease again!

Out of everyone, I sympathized the most for little Winnie. I couldn’t tell her, at 14 months old, that the pain would pass. The most I could give her was Tylenol for the pain. It was heart-breaking to see her deny food, and whimper in pain. She would open her mouth, and point in to show us her “owies” as if she was expecting us to fix it for her. It was cruel and unusual!

We did the considerate thing, and quarantined ourselves at home. There was no way I was going to let another “little one” get this virus! It’s a beast! So, if you have or have had Hand Foot & Mouth Disease, trust me, I sympathize for you.

That being said… now is the time to keep healthy. Hold on to those New Years resolutions, and get your butt into shape! It will keep your immune systems strong for sick season, and greatly improve your quality of life. Start by enjoying some gluten-free pancakes! It feels good to be back!

Ingredients
  1. 1 medium banana
  2. 1 egg
  3. Walnuts (optional)
Instructions
  1. Thoroughly mash ingredients into a medium to small bowl.
  2. Spoon 1/3 of batter onto a lightly greased pan. Cook over medium heat until bubbles form in the batter, and stay open. Flip pancakes and cook about 30 seconds longer.
  3. Repeat step 2 for remaining batter.
  4. Serve with fresh banana slices and walnuts.
