Fresh Squeezed Lemonade

Good morning! It truly is a good morning. I am propped by pillows in my room, listening to the friendly sounds of neighborhood birds chirping away. I saw Micheal off to work, and sent my son off with the homeschool group this morning. The girls are still snuggled up in their beds, dreaming of magical things. There is no other way that I would like to enjoy these few quiet moments then with you and a cold glass of fresh squeezed lemonade.

The last few days were amazing! For the first time this year, Michael and I slept with the windows open to invite the cool night air. It was perfect. My favorite part of living in the Northwest is the distinct seasons. Each season brings new and beautiful things to admire. Right now, we are well into spring. It’s warm, sunny and beautiful! Flowers are blooming. Leaves and blossoms are covering the trees and plants. My blueberry bush on the front porch is now full of life! While I sit here, sipping away at my fresh squeezed lemonade, the anticipation and joy of all the wonderful things coming in the next few months is consuming me.

During the up and coming summer months, our family goes berry picking. We live in berry picking central with farms all around us. It’s an extreme sport at our house! When each season opens up we grab our buckets and get picking! We invite neighbor-kids, friends, and family. The more the merrier. With the discounted prices we stock up on years worth of berries. The amount of savings for these products that we freeze or preserve is worth all the work. It’s also great family time! Better than any time we could spend in front of the television…

With all of these berries we make everything! Some of my favorites are jam, pie, ice-cream and coffee cake. Yum! At the end of a long day picking berries, it’s nice to sit back with a cold glass of fresh squeezed lemonade. This recipe is approved by my husband, born and raised in Florida! Now that is saying something!

Ingredients
  1. 8 cups water
  2. 2 cups sugar
  3. 8 large lemons; freshly squeezed and strained
Instructions
  1. In a large saucepan, heat water and sugar just until sugar dissolves. Remove from heat.
  2. Stir in freshly squeezed lemon juice to sugar water. Refrigerate until cold.
