Amazing things are happening this week at our house. My son graduated middle school and is now venturing into the world of high school. What a blessing it is to watch him grow into a young man. Through a little more hard work then I anticipated, he was able to compete in a mock trial competition. Two districts came together to compete after months and months of preparation.

My son and I barely arrived by the skin of our teeth! After last-minute clothes shopping and getting everything ready we headed for the competition. Moments later we were faced with miles of stopped traffic. Miles and miles. It was at this point that I used the GPS on my phone to get directions which took us through back roads. We ran from the car towing or bags behind us. At one point my shoe fell off and I had to go back and get it. Really… it was a sight.

Just inside the main doors my son darted into the men’s room to change into his suit. I pre-tied his tie over my neck while I waited, then when he came out dressed I tied his shoes for him while he ate a burrito. We grabbed everything and with one big breath of air in then out again we opened the main doors of the building and walked in like smooth, relaxed, got-it-together bosses. Oh… and may I add… he owned that night. It was his court room.

I have to give credit to his team, because they all rocked it too. The real lawyer that sat in the judge seat informed us that in the last 15 years that he has been doing mock trials, this is the best one he has seen so far. I could not have been more proud of my guy!

Ingredients
  1. 2 large english cucumbers
  2. 3/4 cup hummus
Instructions
  1. Wash and dry cucumbers. Cut into 3 or 4 inch cylinders. Hollow cucumbers with a melon-baller to scoop out seeds, keeping bottoms intact.
  2. Fill cups with hummus (I alternated between roasted garlic hummus and beet hummus). Garnish with desired garnishes (I used mango and parsley).
