Apple Fritters

I pre-made these delicious apple fritters before me and the kids headed for the coast. We have had such a blast these last four days but today is the day we come home. I’m glad too because today is… Michael’s birthday! It’s also me and the kids’ last day at the beach and I am coming home to him! I absolutely love the beach… but without Michael it doesn’t seem as bright as it always is. I can’t wait to get home to him and catch him up on all the fun we had! Michael has a rule… odd years is chocolate cake, even years is white cake. So this year I will be whipping up a white cake!

The Captain’s Wife Episode 08: The Death of  my Uncle Stephen Phillips

8 July 1871

“My dear uncle Stephen Phillips died today. He was born November 11, 1791. It is a very sad time for our family because he was my dear father’s only living kin. My aunt Victoria is grief-stricken. Theirs was a long and abiding marriage filled with much happiness. Rosalind, their only child, died the year I was born and they often said I was like another daughter to them. My parents allowed me to spend summers with them at their magnificent estate: Rosemeathe. Whenever I visited there, my uncle would take time to teach me the intricacies of higher mathematics, navigation and astronomy; then, together we would go for rides through the grounds of the estate. My Welsh pony, Princess, was given to me one birthday. I loved her and took care of her myself. My uncle and I would play croquet, tennis and badminton.

My uncle was a retired sea-Captain and delighted in telling me tales of the sea monsters sighted off of Gloucester; and thrilling stories of how he outdistanced Chinese pirates while on the China Seas. He also taught me many of the sea songs (manavilins) and sea shanties (work songs). The former were song by the sailors for fun and the latter only for work. My favourite shantie has always been “Rolling Home” a haunting melody that my uncle would sing for me. Other evening we would play backgammon, chess or checkers.

I loved him like a second father and he loved me like a dear daughter. I do so wish my Captain were here with me at this sad time.”

Ingredients
  1. 3 large tart cooking apples
  2. 1 1/3 cup sifted flour
  3. 1/4 teaspoon salt
  4. 2 teaspoons baking powder
  5. 2 tablespoons sugar
  6. 1 egg
  7. 2/3 cup milk
Instructions
  1. Stir together dry ingredients in a medium size mixing bowl, set aside. In a small mixing bowl beat egg well, whisk in milk. Add egg mixture to flour mixture.
  2. Peel, core and slice apples. Dip in batter and fry in hot oil (365 degrees) for 2-3 minutes, turning once. Dust with confectioners' sugar.
